I have had several people point out that the recipe for the gingerbread cookies is vegan. I had not thought about it before posting the gingerbread recipe, so am grateful to those of you who noticed. I have a few people in my circle who will be getting this treat , some who are vegan and some who are not!

Where is the gingerbread recipe that’s vegan?
I saw the pretty saw what looked like gingerbread layer cake (maybe pumpkin) with a molded fondant top. Was it fondant? Is there any way you would share that recipe? It looks so elegant and I would love to incorporate this along with my springerle cookie tradition. Thank you so much.

Wow, I made that long enough ago that I cannot remember the recipe I used. But I do know that it was a heavy spice cake with a marzipan molded top. I think a gingerbread cake or a pumpkin cake would be great with the marzipan top. I think a less sweet cake would be good, because the marzipan is so sweet; both spice and pumpin cakes tend to be less sweet, so that would be perfect.

Sometimes i must cook for my vegan friends, sometimes for others and in some occasion for both! I am vegan but i don’t mind cooking non-vegan food also.
Can I use your molds for fondant decorations easily? If yes what is the procedure? Are your molds flexible like to be used as push moulds? Thank you.
Can I substitute all the molasses for honey, maple syrup or anything else for the flavor and texture? Or maybe a mixture (without molasses or just a tiny tiny bit)?? I made the mild version that you have in the recipe booklet (half honey and half molasses), and maybe my molasses wasn’t good but the flavor was… not really good at all… they turned out really pretty though, but not good at all. I really want to try a tasteful cookie for my springerle molds. Thanks!

Yes, you can easily use the molds for fondant. You should brush the molds with confectioner’s sugar rather than flour. Our molds are not flexible so you should roll out the fondant, brush your mold with confectioner’s sugar and press onto the fondant, then lift off the mold and cut.

Make sure that you use unsulphered molasses. Instead of using the very traditional gingerbread recipe, try the gingerbread recipe that is posted on this blog. It is a softer sweeter gingerbread recipe that uses dark corn syrup and molasses (again, make sue to use unsulphered molasses) and also has some sugar. You can also use honey instead of molasses, but will need to add a little more flour.
